Gift Cards. I'm really picky and I'd rather not go through the hassle of returning something (or worse, getting a gift I'll never use and feeling obligated to keep it).
I also like things I can use. Food, coffee. I LOVE notebooks and journals, I usually carry some form of paper and a pen with me at all times. I would say that a journal is a great gift for a Virgo.
As unromantic as it sounds, I always need socks and underwear. I usually don't spring for the nice stuff, so a pair of really quality wool socks or some really well-made, lacy, comfy unmentionables are worth mentioning. A friend once bought a great thong for me when we were out shopping together. It was only six bucks, but I am the sort who refuses to spend six bucks on one thong. Great gift.
Basically, look at your Virgo and take note of the things she uses every day - be it something as mundane as socks or something related to a hobby or craft, and get her something she would never spend the money on for herself. For example, I like to bake and cook, but I won't spend tons of money on the top-of-the-line equipment. If someone got me a brand new spring-form-pan or a really good, sharp knife I would barely be able to wait to use it.

Amongst the more useful ones are carrying cases (the stronger the better) external keyboards and portable storage devices (USB drives etc). Spare batteries and cable locks are also very useful if your lady travels a lot.

If your Virgo lady has a green thumb there are many tools and gadgets which can make her life easier if you're looking for a non intimate gift idea.

Women tend to have very specific tastes in colors. You're better off studying her current wardrobe to learn what she likes than choosing colors based on astrology.

I suggest avoiding these because there's no agreed upon standard for them. There are various conflicting systems which match a stone to months and sun signs. It's almost guaranteed that if you give your beloved a necklace or ring with a certain significant stone, someone will later tell her it's the wrong one!
